White Litchee, being white tea, is a rare type of tea made by hand-picking only the bud of the tea leaf, which is the softest and youngest part of the plant, and minimally processing it. Hui Zong, the Song Dynasty's 'Tea Emperor,' favoured white tea because it had the most rare and subtle flavour. White Litchee is handcrafted from tea buds that are about an inch long and tied into a large 'pearl' that unfurls when infused. The enjoyment of this Very Special Rare Tea entails the observation of the pearl unfurling, one bud at a time, transforming into a flower of buds over 30 seconds. All fine teas, but especially this White Litchee tea, should be savoured aesthetically. Brew in a glass teapot to watch the pearl transform, or use a white porcelain tea cup or bowl. Use one pearl for each brew. This tea, because of its excellence, is best taken straight.

Storage advice

Keep the tea stored in its steel box, in a cool dark place. It is important, when storing, to keep it away from sources of heat. If storing in the refrigerator or freezer, pack in small, completely airtight packets or jars. Before use, wait for it to reach room temperature in order to prevent any condensation. Each defrosted packet should be used within a week after opening.
